Veggie Vegan Pizza on Quinoa Crust - Gluten Free!

Ingredients
Makes one 8 inch pizza:
- 3/4 of a cup of quinoa (soaked for about eight hours)
- 1 teaspoon of apple cider vinegar
- 2 teaspoons of mixed herbs, I used herbs de provence and oregano
- a sprinkling of chilli flakes
- salt
For toppings I used:
- 2 tablespoons of organic tomato puree
- a dozen cherry tomatoes
- a handful of artichokes
- a handful of pitted black olives
- a handful of rocket (arugula)

Instructions:
Soak the quinoa overnight or for about eight hours in water . The best way to do this is put the quinoa in a larger bowl and cover it in water, make sure that it's covered by a few cm's. Then leave this to one side.
Once you're ready to make the pizza, pre-heat the oven to 190C. Then drain any water left in the quinoa bowl, before putting the quinoa into a food processor with the apple cider vinegar, herb, chilli flakes and salt. Blend for a few minutes until a smooth dough forms, it should look a bit like pancake mix.
Line the bottom of a pizza dish or cake pan with olive oil and pour the mix in, then bake for about 15- 20 minutes, until the base is firm - it cooks really pretty quickly though.
Remove and add your topping, either place it back in the oven for a few minutes to warm them or enjoy your toppings raw! I like my tomatoes and tomato puree heated and the rest of my ingredients raw. Delicious!

COLD BUSTER- SIBERIAN ELEUTHERO ROOT

Immune System Support
Siberian ginseng can stimulate the body's immune system, helping to prevent and treat viruses, infection and disease. According to the University of Maryland Medical Center, when taken with andrographis, Siberian ginseng may help reduce the intensity and length of the common cold. The same plant combination may help alleviate flu symptoms. Siberian ginseng may also improve general immune system function in people who take the extract form regularly. Since drowsiness is a potential side effect of Siberian ginseng, taking it with cold or flu medications with similar effects may exacerbate drowsiness. In these cases, the supplement is best taken when you have ample time and ability to rest and with your doctor's approval.

Stress Relief
Siberian ginseng is known for its anti-stress capabilities. According to the University of Maryland Medical Center, the plant is believed to strengthen the body's ability to cope with stress, which may also prevent stress-related medical conditions such as heartburn, upset stomach and tension headaches. Since the herb may enhance calmness, some partakers claim to attain improved quality of life. People who struggle with mild or occasional anxiety, nervousness or hyperactivity may benefit from these stress-reducing properties. Siberian ginseng is not, however, recommended as a treatment for psychological conditions such as anxiety disorder or depression. Since warm beverages can also enhance calmness, Siberian ginseng in tea form may prove particularly useful in enhancing relaxation.

Fatigue Relief
People who experience mild to moderate fatigue due to illness, insufficient sleep or emotional problems may benefit from Siberian ginseng. According to research published in "Chinese Medicine" in October 2009, Siberian ginseng leaf and stem extract led to significantly reduced fatigue in animals and led to increased physical activity capabilities. Researchers suspect similar benefits in humans and suggest that the plant extract may improve protein synthesis and muscle growth, which could further reduce fatigue.

Side Effects
Although eleuthero is likely safe when used in the short term, it's important to take caution when using Siberian ginseng if you have high blood pressure, a heart condition, diabetes, a hormone-sensitive condition (such as breast cancer or uterine fibroids), or a mental condition (such as mania or schizophrenia). In these cases, the NIH recommends avoiding the use of eleuthero or using eleuthero only under your doctor's supervision.

MILK THISTLE

SEVEN BENEFITS OF MILK THISTLE

1) Liver Affinity
Milk thistle helps with general liver problems including jaundice (which is when the skin becomes discolored/yellow), hepatic pain, and swelling. Based on the novel "The One Earth Herbal Sourcebook," flavonoids discovered in milk thistle seed add to the significant liver regenerating and protecting qualities found in other parts of milk thistle. Flavonoids will have profound results on the body's immune system, thus boosting the body's ability to resist illness. They help stabilize cell membranes and control cell function. Milk thistle is also thought to be beneficial for the following problems: acute viral hepatitis, metabolic disease, continual-persistent hepatitis, and cirrhosis of the liver.

2) Cancer
Some early research into the herb also indicates that active materials in milk thistle might have anti-cancer effects. One active material called silymarin has powerful anti-oxidant qualities, and has been proven to inhibit the development of breast, human prostate, and cervical cancer cells in test tubes. More studies are required to ascertain whether the herb is efficient or safe for individuals with these kinds of cancer.

3) High Cholesterol
One animal study discovered that silymarin (an effective compound in milk thistle) worked as efficiently as the cholesterol-lowering drug probucol, with the added advantage of considerably raising HDL cholesterol. More studies in individuals are needed.

4) Gallstones and The Gallbladder
The silymarin mentioned above that is inside milk thistle can raise bile solubility, which encourages its circulation. When you need to avoid or remedy gallstones this could be quite useful. Gallstones are a lot less likely to form when the bile has better circulation. Researches demonstrate that routine use of milk thistle may result in a noticeable decrease of bile's cholesterol levels.

5) Obesity
Very few people recognize the function of the liver in fat reduction. Enhancing liver function is frequently neglected in almost all weight loss plans. The liver is significant for purifying the blood and metabolizing the fat in the body. As the liver's ability to function is being increased by silymarin, fat can end up being metabolized quicker. This means that as a result it's much easier for all of us to lose weight.

6) Our Skin
Skin is an essential organ for cleansing, and the biggest organ in the physique. Psoriasis is supposed to occur because of the existence of specific toxins within our bloodstream. There are a few bits of evidence that show the risk of psoriasis as having a potential connection to abnormal liver functions. Thus, as a result of helping the liver, one of the benefits of milk thistle is that it helps our skin to be healthier through increased liver function.

7) Weight Loss
Milk thistle has been used medicinally for about 2,000 years. It reportedly contains potent antioxidants that help to detoxify and repair the liver. According to Brenda Watson, author of "The Detox Strategy," enhancing your body's natural detoxification abilities helps to promote weight loss. However, you should seek medical advice before taking milk thistle, particularly if you have a medical condition.

Detoxification and Weight Loss
Your body is constantly under assault from toxins -- from the air you breathe, foods you consume or illness. When your body cannot properly remove toxins, they build up and disrupt metabolic functions including digestion and metabolism. For instance, toxins can reduce your body's fat-burning ability by up to 20 percent, notes Watson. By boosting toxin removal through detoxification and herbs such as milk thistle, you may help to restore metabolism and increase fat loss.

Active Ingredients in Milk Thistle
The three active ingredients in milk thistle are antioxidant flavonoids known collectively as silymarin. They protect the liver -- the chief detoxification organ in your body -- in several ways. They prevent free radicals from damaging liver cells, inhibit toxins from entering liver cells and also enable liver cells to regenerate more speedily. By keeping the liver healthy, milk thistle boosts its detoxification abilities, which in turn may enhance weight loss.

Milk Thistle and Blood Glucose Control
Silymarin can also help to lower fasting blood glucose levels, according to a study published in the journal "Phytotherapy Research" in 2006. By decreasing blood glucose levels, silymarin may also keep insulin levels more stable. High levels of insulin can encourage fat storage in your body. The flavonoid also helped to lower cholesterol and triglyceride levels, which are often elevated in people who are overweight or obese. High levels of these blood fats can also increase your risk of heart disease.

Dosage
Choose milk thistle supplements that contain a standardized dose of 70 to 80 percent silymarin, advises Leslie Beck, author of "The Complete A-Z Nutrition Encyclopedia." Your family doctor or a naturopath can recommend an appropriate dose to take, especially if you have a medical condition or you're pregnant or breastfeeding. Otherwise, follow the directions on the label.

STEAMED BUCKWHEAT-STUFFED KALE LEAVES WITH THAI FLAVORS

Ingredients:
½ cup buckwheat groats
1 cup water
2 tsp. coconut oil
3 red spring onions (or green onions), chopped finely
2 cloves garlic, chopped finely
1.5 tsp. ginger, peeled and chopped finely
Half a zucchini, diced small
3 curly kale leaves, chopped finely
2 tsp. lemon juice
1 tsp. nama shoyu (or coconut aminos)
1 tsp. rice wine vinegar
¼ t. fine sea salt
Fresh ground pepper (to taste)
Dash cayenne pepper (to taste)
1 T. unsweetened shredded coconut
2 T. raw cashews or peanuts, chopped finely
Small handful cilantro, chopped
1 bunch Lacinato kale leaves

Instructions:
Rinse the buckwheat groats thoroughly (even soak them if you have time). Pour the water into a saucepan, salt it well and bring to a boil, then add the buckwheat, cover and reduce to a simmer for ten minutes.

Heat the coconut oil in a small pan and gently sauté the spring onions, garlic and ginger. Add the zucchini toward the end, just long enough to take off the raw edge. Remove from heat and set aside.

Put your three chopped curly kale leaves in a medium bowl. When the buckwheat is cooked, transfer it on top of the kale and allow the heat to wilt the leaves a bit. Add the lemon juice, nama shoyu and rice wine vinegar, and mix thoroughly. Add the salt, pepper and cayenne and mix again. Finally, add the sautéed mixture, coconut, cashews/peanuts and cilantro and mix once more. Set aside.

Run a sharp knife down each side of the stem of the Lacinato kale leaves to remove the thickest part of the stem (leave the thinner part near the top of the leaf intact), but keep the thick stems and chop them, then throw them into the bottom of a wok.
Lay a kale leaf on a flat surface. Place a scant tablespoon of the filling near one end of the leaf and begin rolling.

Tuck the end you are holding underneath the filling, and then continue much like you're rolling a burrito. Line up the rolls snugly in the wok on top of the pile of kale stems. The stems hold the rolls away from the bottom of the wok, out of the water.

Pour a cup of water into the wok and turn the heat up to medium-high until the water boils. Once it boils, take the lid of any large pot and rest it over the kale leaves (or use the lid that came with your wok if you have one - Stefanie doesn't). Reduce the heat to medium low and steam the rolls for ten minutes.
Allow them to cool a little bit before you remove them from the wok.

HEALTHY FOODS- HEALTH BENEFITS OF BUCKWHEAT

Energizing and nutritious, buckwheat is available throughout the year and can be served as an alternative to rice or made into porridge.  While many people think that buckwheat is a cereal grain, it is actually a fruit seed that is related to rhubarb and sorrel making it a suitable substitute for grains for people who are sensitive to wheat or other grains that contain protein gluten. Buckwheat flowers are very fragrant and are attractive to bees that use them to produce a special, strongly flavored, dark honey.

Health Benefits of Buckwheat:
Buckwheat is a powerhouse of nutrients. Being gluten free, it can be an excellent substitute for wheat, rye, barley and oats. It is thus considered suitable for those who are allergic to wheat and celiac patients. It has a high content of fiber and protein, and significant amounts of iron and magnesium. Besides, it contains all the eight essential amino acids. Buckwheat is also packed with phyto nutrients which are amazing disease fighting organic components. The several health benefits of buckwheat can be attributed to its amazing nutritional profile.

1. Aids in Weight Loss:
Whole grain buckwheat can be very helpful in weight loss. Buckwheat has fewer calories in comparison to wheat or barley. It is free of saturated fat and cholesterol and rich in dietary fiber and protein. This combination plays an important role in suppressing appetite, controlling blood sugar, facilitating proper digestion and building lean muscle mass.

2. Diabetic friendly:
Being low in calories and fat free, buckwheat is an ideal food for diabetic patients. Buckwheat contains a medicinal chemical which strengthens capillary walls and reduces haemorrhage, thus lowering the risk of fatal strokes and heart attacks in people with high blood pressure and diabetes. It improves micro vascular integrity and circulation in diabetics, thus preventing the damage of nerves and muscle cells and loss of kidney function. D-chiro-inositol is a compound that is deficient in type II diabetic patients. This compound is required for proper conduction of insulin for controlling and treating type II diabetes. Buckwheat also contains D-chiro-inositol.

3. Reduces Blood Pressure:
Buckwheat is a good source of magnesium which is instrumental in improving blood pressure by relaxing the blood vessels. This reduces blood pressure naturally without the use of harmful chemicals.

4. Cardiovascular Health:
Being rich in B vitamins, particularly niacin, folate and vitamin B6, buckwheat is highly beneficial for the cardiovascular health. These vitamins reduce the concentration of cholesterol in the blood. Niacin causes an increase in high density lipoproteins (HDL) which further enhance the blood vessel strength and cholesterol removal. The minerals like iron, magnesium, phosphorus, copper and manganese help in reducing blood pressure and improving blood oxygenation. Buckwheat contains high quality proteins which remove the plaque forming triglycerides and low density lipoproteins (LDL). Thus buckwheat is highly beneficial for people with weak heart functions and other cardiovascular problems.

5. Protection against Breast cancer:
Research has proved that eating a diet rich in fiber from whole grains such as buckwheat reduces the risk of breast cancer. In fact, pre-menopausal women eating wholegrain fiber are at a lower risk of developing breast cancer. The antioxidant properties of buckwheat are often used as an antidote for x-ray irradiators. The antioxidants, lignans play an important role in estrogen reception and hence are beneficial for women during or after their menopause. The plant lignans are converted into mammalian lignans in the intestines.  One of these called enterolactone is believed to protect against breast cancer and other forms of cancer related to hormones.

6. Protection against Childhood Asthma:
As per research, consumption of whole grains such as buckwheat can reduce the risk of childhood asthma by around 50 percent.  Due to its high content of magnesium and vitamin E, buckwheat can help in reducing the incidence of childhood asthma.

7. Prevents Gallstones:
Being high in insoluble fiber, buckwheat can help in preventing gallstones. Insoluble fiber speeds up the movement of food through the intestines, increases insulin sensitivity but lowers the secretion of bile acids and blood sugar.

8. Health Benefits of Buckwheat Protein:
Buckwheat contains proteins of a very high quality which offers several health benefits. This protein in combination with amino acids helps in lowering cholesterol levels besides being a key factor in preventing diabetes and obesity. In addition, buckwheat proteins reduce hypertension by reducing the activity of angiotensin converting enzyme.

9. Healthy Bone Structure:
Manganese present in buckwheat ensures healthy bone structure by forming essential enzymes for building bones and acting as a co-enzyme for assisting metabolic progression in the human body. It is also actively involved in the formation of connective tissues, absorption of calcium and metabolism of fat and sugar. Magnesium is also beneficial for bone and dental health. It trans- misses nerve impulses and helps in the production of energy. It facilitates the absorption of calcium by the body and prevents the development of osteoporosis. Thus, buckwheat has a lot to contribute to a healthy bone structure.

10. Mental Health:
Buckwheat also contributes to mental health. It contains tryptophan which influences the mood in a positive manner, thus making happy and preventing depression.

11. Other Benefits:
Being rich in minerals such as phosphorus, magnesium, iron, copper, zinc and manganese and having high flavonoids content, buckwheat is very effective in curing low hemoglobin and frequent colds and flu. Due to its high content of vitamin B complex, buckwheat is often recommended to people suffering from liver disorders and illnesses which require them to restrict their consumption of sugary substances.

Skin Benefits of Buckwheat:
Skin problems are a major cause of concern in the present scenario. Proper supply of nutrients to the body is essential for healthy and radiant skin. The quality of skin largely depends upon genetic factors, but it is also influenced by environmental factors to a significant extent such as exposure to pollution, level of stress, lifestyle etc. Being a powerhouse of nutrients, buckwheat has an important role to play in skin health.

12. Natural Suntan:
Buckwheat helps greatly in skincare. It contains large amounts of rutin which is beneficial in protecting against skin damage caused by the sun. Hence, it can be regarded as a natural suntan lotion as it provides protection against the harmful rays of the sun.

13. Prevents Aging:
The powerful antioxidants and flavonoids present in buckwheat prevent premature skin aging.

14. Pain Relief:
A thick paste made by mixing buckwheat flour and warm water can be applied to painful joints for quick relief.

15. Makes Skin Glow:
Magnesium contained in buckwheat has a relaxing effect on the blood vessels, thus improving blood circulation. This results in a glowing and youthful looking skin.

Hair Benefits of Buckwheat:
Healthy hair greatly enhances the appearance of an individual and is often a source of admiration. But in the present scenario, there are several hair problems ranging from hair loss, split ends, dandruff, hair thinning and alopecia. Just like skin, proper supply of essential nutrients is extremely important for strengthening the hair follicles and maintaining healthy and damage free hair. Buckwheat contains some of the essential nutrients that are beneficial for hair health.

16. Helps Hair Growth:
Buckwheat contains 75% of complex carbohydrates. Whole grain-carbohydrates are good for proper growth of hair. Buckwheat is rich in vitamin A, B-complex vitamins and zinc, making it highly conducive for hair growth.

17. Improves Hair Health:
Vitamin B6 or pyridoxine is vital for hair growth and health. Being soluble in water, this vitamin cannot be stored in the body. It has to be replenished from some food source or supplement. Buckwheat is a great source of vitamin B6.

Buckwheat Nutritional Value:
Buckwheat is a powerhouse of nutrients. It contains a range of nutrients comprising of carbohydrates, vitamins, minerals, sugar, soluble and insoluble fiber, sodium and amino acids. It contains minerals like manganese, magnesium and copper. Moreover, it has two health-promoting flavonoids-rutin and quercitin and all the eight essential amino-acids. Buckwheat is also a great source of an essential fatty acid called Alpha-Linolenic acid which is important for overall health.
  • Vitamins: Buckwheat provides 8% of daily value (DV) of niacin which aids in the release of energy from carbohydrates, protein and fat during metabolism. They provide 6% of daily requirement of vitamin B-6, folate and choline and small amounts of vitamin K, riboflavin and thiamine.
  • Minerals: One cup serving of buckwheat grains provides 21% DV of magnesium and 12% DV of phosphorus and copper. Thus, they are an important source of these minerals.

Goldenseal has been called "the universal herb" for over 300 years. The powdered rootstock - considered a general tonic for the mucous membranes - can be applied as a snuff or an antiseptic dust, in washes and infusions, or in capsule form. In combination with other herbs, goldenseal has been used to treat ulcers, sinus conditions, dyspepsia, worms, bowel irregularity, gonorrhea, prostate and vaginal infections, and morning sickness among other problems.

However, goldenseal should be taken only in small and infrequent doses... no more than one half gram, and not more than three times daily.

Golden Seal acts particularly on all mucous membranes and is
  • alterative [an agent that produces gradual beneficial change in the body, usually by improving the nutrition, without having any marked specific effect or abnormal evacuation]
  • antibacterial [an agent that destroys bacteria; bactericide]
  • antibiotic [an agent that destroys or stops the growth of micro-organisms]
  • anti-catarrhal
  • anti-inflammatory [an agent to ease inflammation]
  • antiperiodic [an agent which counteracts periodic or intermittent diseases such as malaria etc.]
  • antiseptic [an agent for destroying or inhibiting pathogenic or putrefactive bacteria]
  • antispasmodic [an agent that relieves or checks muscular spasms and cramps]
  • astringent [an agent that contracts organic tissue, reducing secretions or discharges]
  • detergent [an agent that cleanses wounds and sores of diseased or dead matter]
  • diuretic [an agent that increases the secretion and expulsion of urine]
  • emollient [an agent used externally to soften and soothe]
  • laxative [an agent promoting evacuation of the bowels; a mild purgative]
  • muscle stimulant [an agent that excites or quickens the functional activity of the tissues giving more energy]
  • soothing
  • stomachic [an agent that strengthens, stimulates or tones the stomach]
  • tonic [an agent that strengthens or invigorates organs or the entire organism].
Golden Seal is a wonderful, natural, powerful antibiotic. The herb:
  • goes straight to the bloodstream and eliminates infection in the body
  • enables the liver to recover
  • when taken in combination with other herbs will enhance the properties of the other herbs
  • works wonders in combination with Echinacea and Zinc particularly at the onset of cold and flu symptoms, especially coughs and sore throats
Golden Seal soothes and heals the surfaces of the body and is used externally as a wash for:
  • acne
  • athlete's foot
  • bathing the eyes [with weak infusion of tea] or Golden Seal ointment, often combined with Eyebright
  • canker sores
  • ear infections
  • eczema
  • herpes
  • psoriasis
  • ringworm
  • skin problems
  • sores
  • Cellulitis
Goldenseal has been found to be effective against a number of disease-causing organisms, including Staphylococcus, Streptococcus, and Chlamydia species, E. coli, Salmonella typhi, Entamoeba histolytica and many others. Berberine and related alkaloids in goldenseal have been credited with its antimicrobial effects. Berberine may be responsible for the increased white blood cell activity associated with goldenseal use, as well as its promotion of blood flow in the liver and spleen.

Promoting circulation in these organs enhances their general function. Berberine has been used recently in China to combat the depression of the white blood cell count that commonly follows chemotherapy and radiation therapy for cancer. Both human and animal studies suggest berberine may have potential in the treatment of brain tumors and skin cancers. Berberine also improves cardiovascular health, lowering LDL ("bad") cholesterol and triglycerides, decreases blood pressure when elevated, and improves the function of the heart muscle.

Since goldenseal acts as an astringent to mucosal tissues, it has been recommended to treat oral cancers, as well as abnormal cells in the cervix (cervical dysplasia) and cervical cancer. Goldenseal's astringent and immune-stimulating action seems to heal inflamed cells and eliminate abnormal cells.

It was not until 1798 that its medicinal virtues began to attract attention. From then on its reputation as a powerful healing herb spread, both in England and America, and by about 1850 it had became an important article of commerce. It was popularly used as a bitter stomach digestive (to help stimulate digestion and improve appetite), to treat skin inflammations, and those of the eyes such as conjunctivitis. It was also used for inflammation of the mucous membranes of the throat and digestive system. It?s traditional uses also include the treatment of peptic ulcers, gastritis, dyspepsia and colitis. It is said to stimulate appetite and generally have a toning effect on the whole body has also been used for anorexia nervosa. It is also said to be effective for treatment of catarrhal conditions of the upper respiratory tract and inflammations of the urinary tract.

Goldenseal's numerous uses are attributed to its antibiotic, anti-inflammatory and astringent properties. It soothes irritated mucus membranes aiding the eyes, ears, nose and throat. Taken at the first signs of respiratory problems, colds or flu, Goldenseal helps can help to prevent further symptoms from developing. It has also been used to help reduce fevers, and relive congestion and excess mucous.
Goldenseal cleanses and promotes healthy glandular functions by increasing bile flow and digestive enzymes, therefore regulating healthy liver and spleen functions. It can relieve constipation and may also be used to treat infections of the bladder and intestines as well.

Goldenseal contains calcium, iron, manganese, vitamin A, vitamin C, vitamin E, B-complex, and other nutrients and minerals. The roots and rhizomes of goldenseal contain many isoquinoline alkaloids, including hydrastine, berberine, canadine, canadaline, and l-hydrastine as well as traces of essential oil, fatty oil and resin. It is believed that the high content of these alkaloids gives its antibiotic, anti-infective and immune stimulating qualities.

In particular it is the alkaloid berberine that is most likely responsible for Goldenseal's effectiveness against bacteria, protozoa, fungi, Streptococci and it also promotes easier removal of the bacteria by inhibiting their ability to adhere to tissue surfaces. Berberine is also anti-fungal and strongly anti-diarrheal. It aids against the infection of mucous membranes such as the lining of the oral cavity, throat, sinus, bronchi, genito-urinary tract and gastrointestinal tract. Clinical studies have shown it is effective in the treatment of diarrhea cause by E. coli (traveller's diarrhea), Shigella dysenteriae (shigellosis), salmonella paratyphi (food poisoning), giardia lamblia (giardiasis), and vibrio cholerae (cholera).
Goldenseal may also help with allergic rhinitis, hay fever, laryngitis, hepatitis, cystitis, and alcoholic liver disease.

It has proven its value in cases of diarrhea and haemorrhoids. Its astringent properties have also been employed in cases of excessive menstruation and internal bleeding.
