RECIPE- MINI FRITATAS

 
Ingredients
  • Nonstick vegetable oil cooking spray
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 2/3 cup mixed chopped veggies
  • 2 tablespoons chopped fresh Italian parsley leaves
Directions

Preheat the oven to 375 degrees F.

Spray 2 mini muffin tins (each with 24 cups) with nonstick spray. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in veggies and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.

Veggie Vegan Pizza on Quinoa Crust - Gluten Free!




Ingredients  
Makes one 8 inch pizza:
- 3/4 of a cup of quinoa (soaked for about eight hours)
- 1 teaspoon of apple cider vinegar
- 2 teaspoons of mixed herbs, I used herbs de provence and oregano
- a sprinkling of chilli flakes
- salt
For toppings I used:
- 2 tablespoons of organic tomato puree
- a dozen cherry tomatoes
- a handful of artichokes
- a handful of pitted black olives
- a handful of rocket (arugula)

Instructions: 
Soak the quinoa overnight or for about eight hours in water . The best way to do this is put the quinoa in a larger bowl and cover it in water, make sure that it's covered by a few cm's. Then leave this to one side.
Once you're ready to make the pizza, pre-heat the oven to 190C. Then drain any water left in the quinoa bowl, before putting the quinoa into a food processor with the apple cider vinegar, herb, chilli flakes and salt. Blend for a few minutes until a smooth dough forms, it should look a bit like pancake mix.
Line the bottom of a pizza dish or cake pan with olive oil and pour the mix in, then bake for about 15- 20 minutes, until the base is firm - it cooks really pretty quickly though.
Remove and add your topping, either place it back in the oven for a few minutes to warm them or enjoy your toppings raw! I like my tomatoes and tomato puree heated and the rest of my ingredients raw. Delicious!

RECIPE-GLUTEN FREE SPAGHETTI SQUASH

Love your spaghetti?  Here's a healthy GLUTEN-FREE way to enjoy it and add more vegetables to your diet!
 
 
Ingredients:
  • 1 large spaghetti squash  
  • 1 tbs olive oil 
  • 1 lb organic ground beef
  • 1 tbs organic coconut oil
  • 1 large white onion, chopped
  • 1 can organic Italian-style tomatoes
  • 1 clove garlic, crushed
  • sea salt, black and chili pepper  
  • fresh chopped basil to taste
Directions: 
  1. Preheat oven to 375 degrees. 
  2. Cut the squash lengthwise and clean out seeds. Rub with olive oil, and sprinkle with salt and pepper. Lie face down on a baking sheet and place in the oven for 60 minutes, flipping over once at the halfway point. 
  3. Meanwhile, in a large pan heat the coconut oil and add the chopped onion and garlic, letting cook until it becomes translucent.
  4. Add in the ground meat and allow to brown all the way thru (approx 6-8 minutes). 
  5. In a high-power blender, mix the tomatoes and pour over the meat mixture. Add spices to taste and remove from heat. After removing squash from the oven, use a fork to form the "spaghetti," and spoon a generous helping of meat on top.

RECIPE-SHREDDED ROOT VEGETABLE PANCAKES


Makes: 6 servings, 2 pancakes each
Total Time: 45 minutes

Ingredients
  • 1 large egg, lightly beaten
  • 1/4 cup whole-wheat flour
  • 3 tablespoons chopped scallions
  • 1 tablespoon chopped fresh dill, or 1 teaspoon dried
  • 1 tablespoon prepared horseradish
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 4 cups assorted root vegetables, peeled (about 1 1/2 pounds; see Tip) and shredded
  • 2 slices cooked bacon, crumbled (optional)
  • 6 teaspoons canola oil, divided
  • Reduced-fat sour cream, for garnish
  Preparation
  1. Preheat oven to 400°F. Coat a baking sheet with cooking spray.
  2. Whisk egg, flour, scallions, dill, horseradish, salt and pepper in a large bowl. Stir in vegetables and bacon (if using).
  3. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Cook 4 pancakes per batch: place about 1/4 cup vegetable mixture in a little of the oil and press with the back of a spatula to flatten into a 2- to 3-inch pancake. Cook until crispy and golden, 1 1/2 to 3 minutes per side. Transfer the pancakes to the prepared baking sheet. Continue with 2 more batches, using the remaining 4 teaspoons oil and vegetable mixture. Transfer the baking sheet to the oven and bake for 15 minutes. Serve garnished with sour cream, if desired.

STEAMED BUCKWHEAT-STUFFED KALE LEAVES WITH THAI FLAVORS


Ingredients:
½ cup buckwheat groats
1 cup water
2 tsp. coconut oil
3 red spring onions (or green onions), chopped finely
2 cloves garlic, chopped finely
1.5 tsp. ginger, peeled and chopped finely
Half a zucchini, diced small
3 curly kale leaves, chopped finely
2 tsp. lemon juice
1 tsp. nama shoyu (or coconut aminos)
1 tsp. rice wine vinegar
¼ t. fine sea salt
Fresh ground pepper (to taste)
Dash cayenne pepper (to taste)
1 T. unsweetened shredded coconut
2 T. raw cashews or peanuts, chopped finely
Small handful cilantro, chopped
1 bunch Lacinato kale leaves

Instructions:
Rinse the buckwheat groats thoroughly (even soak them if you have time). Pour the water into a saucepan, salt it well and bring to a boil, then add the buckwheat, cover and reduce to a simmer for ten minutes.

Heat the coconut oil in a small pan and gently sauté the spring onions, garlic and ginger. Add the zucchini toward the end, just long enough to take off the raw edge. Remove from heat and set aside.

Put your three chopped curly kale leaves in a medium bowl. When the buckwheat is cooked, transfer it on top of the kale and allow the heat to wilt the leaves a bit. Add the lemon juice, nama shoyu and rice wine vinegar, and mix thoroughly. Add the salt, pepper and cayenne and mix again. Finally, add the sautéed mixture, coconut, cashews/peanuts and cilantro and mix once more. Set aside.

Run a sharp knife down each side of the stem of the Lacinato kale leaves to remove the thickest part of the stem (leave the thinner part near the top of the leaf intact), but keep the thick stems and chop them, then throw them into the bottom of a wok.
Lay a kale leaf on a flat surface. Place a scant tablespoon of the filling near one end of the leaf and begin rolling.
   
Tuck the end you are holding underneath the filling, and then continue much like you're rolling a burrito. Line up the rolls snugly in the wok on top of the pile of kale stems. The stems hold the rolls away from the bottom of the wok, out of the water.    

Pour a cup of water into the wok and turn the heat up to medium-high until the water boils. Once it boils, take the lid of any large pot and rest it over the kale leaves (or use the lid that came with your wok if you have one - Stefanie doesn't). Reduce the heat to medium low and steam the rolls for ten minutes.
Allow them to cool a little bit before you remove them from the wok.

Goldenseal has been found to be effective against a number of disease-causing organisms, including Staphylococcus, Streptococcus, and Chlamydia species, E. coli, Salmonella typhi, Entamoeba histolytica and many others. Berberine and related alkaloids in goldenseal have been credited with its antimicrobial effects. Berberine may be responsible for the increased white blood cell activity associated with goldenseal use, as well as its promotion of blood flow in the liver and spleen.

Promoting circulation in these organs enhances their general function. Berberine has been used recently in China to combat the depression of the white blood cell count that commonly follows chemotherapy and radiation therapy for cancer. Goldenseal contains calcium, iron, manganese, vitamin A, vitamin C, vitamin E, B-complex, and other nutrients and minerals. The roots and rhizomes of goldenseal contain many isoquinoline alkaloids, including hydrastine, berberine, canadine, canadaline, and l-hydrastine as well as traces of essential oil, fatty oil and resin. It is believed that the high content of these alkaloids gives its antibiotic, anti-infective and immune stimulating qualities.

In particular it is the alkaloid berberine that is most likely responsible for Goldenseal's effectiveness against bacteria, protozoa, fungi, Streptococci and it also promotes easier removal of the bacteria by inhibiting their ability to adhere to tissue surfaces. Berberine is also anti-fungal and strongly anti-diarrheal. It aids against the infection of mucous membranes such as the lining of the oral cavity, throat, sinus, bronchi, genito-urinary tract and gastrointestinal tract. Clinical studies have shown it is effective in the treatment of diarrhea cause by E. coli (traveller's diarrhea), Shigella dysenteriae (shigellosis), salmonella paratyphi (food poisoning), giardia lamblia (giardiasis), and vibrio cholerae (cholera).

Precautions
Goldenseal is a potent plant and must be used with care.
Don't exceed three weeks of continuous use without a break of at least two weeks
May cause gastrointestinal distress and possible nervous system effects
Eating the fresh plant can cause inflammation of the mucous membrane.
In high doses, goldenseal can irritate the skin, mouth , throat, and vagina. If any inflammation develops, stop taking immediately.
It may cause nausea and diarrhea. Stop taking immediately.
DO NOT USE DURING PREGNANCY, it may stimulate the uterus.
Do not use Goldenseal without consulting a physician if you have had heart disease, diabetes, glaucoma, a stroke, high blood pressure. It stimulates the heart muscle, and the result is increased blood pressure.
Do not give goldenseal to children under two. Start with small doses for children.
High doses my interfere with Vitamin B metabolism.
